INGREDIENTS

1 head cauliflower
Salt and pepper to taste
2 tablespoons olive oil

½ cup Paleo mayonnaise
1 tablespoon Dijon mustard
1 tablespoon fresh or dried dill finely chopped
Juice of ½ lemon
½ red onion, diced
2 stalks celery, diced
2 hardboiled eggs, chopped
4 small sweet pickles finely chopped
1 can black olives (optional) My mom always put in black olives and sweet pickles in her salad.

DIRECTIONS

  1. Preheat oven to 400˚F
  2. Cut the cauliflower into medium florets.
  3. Place cauliflower onto baking sheet and season with salt, pepper, and olive oil.
  4. Bake in preheated oven for 25 minutes or until lightly browned and a bit crispy.
  5. While cauliflower is roasting mix rest of ingredients in large bowl. Set aside.
  6. Cool Cauliflower before adding to large bowl with dressing ingredients.
  7. Garnish with more freshly chopped dill and a couple slices of hardboiled egg before serving.                                                                                                                                                                   Enjoy!
