Coconut Lime Chocolate Cherry Bites

Great snack or a bite for energy on a hike!  
Make 12 balls

Ingredients:  coconut-lime-bites
1 cup of dried unsweetened cherries (dried fruit is sweet enough. Look at the label and make sure JUST cherries.  Don’t want added sugar or oil)
1 tablespoon of raw honey (optional)  I thought it was sweet enough without the honey. 
1 teaspoon of vanilla extract 
Zest and juice from 2 large limes
4 tablespoons of almond butter  (read the label, Just almonds. )
1 cup of macadamia nuts chopped up coarsely or other nut of your choice. 
1 cup of shredded unsweetened coconut flakes


Directions:
Mix all ingredients EXCEPT coconut flakes into mixing bowl.  In separate small bowl add shredded coconut flakes.  Shape the cherry mixture into little balls and roll in the coconut flakes.  Chill.  Enjoy!
