Creamy Fruit Salad

Serves 7 to 8 people
If you are not worried about the calories add more coconut milk and add nuts  (pecans or macadamia nuts would taste yummy)

Ingredients
1/4 cup full fat coconut creamCreamy fruit salad
1 cup grapes cut in half
6 dates  chopped finely       
2 pears chopped in cubes
1/4 cup unsweetened coconut flakes
2 apples cubed with lemon juice mixed on them.  
1 cup cubed pineapple chunks in 100% juice (drain the juice) Save the juice and use it in a smoothie.  

Directions
chill a can of 13.5 ounce can of full-fat coconut milk.  Chill overnight
Mix all fruit and coconut flakes together in large mixing bowl.  Scoop out the 1/4 cup of solid coconut milk from refrigerator.  Chill the salad.
Enjoy!

NOTE:  Most people don’t like the peal on the apples or pears so when I am making them for others I peal the fruit.
