Crispy “Not fried” Chicken

Serves 4
This is so easy and taste so yummy.  Paleo, clean eating and gluten free. 

INGREDIENTS

Paleo, gluten free, clean eating3lbs of chicken thighs (skin taken off)
2 tablespoon extra-virgin olive oil
2 tablespoons Dijon mustard
zest and juice of 1 lemon
1 teaspoon o onion powder
1 teaspoon of garlic powder
1 teaspoon of paprika
1 teaspoon of rosemary
1 teaspoon Italian seasoning
Pinch of Salt
1 teaspoon pepper

DIRECTIONS
Preheat oven to 425 F
spray cookie sheet generously with coconut spray.
In medium size bowl mix oil, lemon juice, zest and mustard.  In separate bowl add spices and mix.  Dip and fully coat chicken pieces with oil mixture.  Lay of cookie sheet with sides so oil from meat doesn’t drip in oven.  Then generously sprinkle both sides of meat with spice mixture.  Cook until golden brown  and cooked through.  Bake 20 to 30 minutes.
