Delicious Kale Apple Salad

Serves 6 unless you are like me and eat a huge bowl of this. 

Adapted from Paleo Comfort Foods (One of my favorite cookbooks)

Note:  I usually do not like Kale unless hidden in a casserole but because of the sweetness of the apples and dressing this taste awesome.  It’s so nutritionally dense and so much flavor.  Yum I say. 


Kale Apple Salad, Paleo, grain free, Clean eatingINGREDIENTS

1 large bunch of kale washed with tough stems removes and chopped into little pieces.
1/3 cup sun-dried tomatoes, chopped finely
2 Granny Smith Apples
½ cup mint cleaned with stems removed and finely chopped
½ cup Italian parsley with stems removed and finely chopped
¼ cup toasted almonds
DRESSING INGREDIENTS
juice of 2 lemons
¼ cup of extra virgin olive oil
1 tablespoon Dijon mustard
1 tablespoon honey

DIRECTIONS
Add kale and all ingredients to a large mixing bowl except nuts and dressing ingredients.  (set nuts aside until ready to eat than toss into salad)
In separate bowl make dressing.  Add dressing ingredients to a small bowl and beat until creamy.  Add to salad and refrigerate until ready to serve
