I absolutely love biscotti.  Every time I go to my mom’s we make espresso and have a biscotti.  The only problem is most store bought boscotti is filled with sugar, gluten and other unhealthy ingredients.  I found this recipe simple to make and it tastes delicious!  Almond flour is packed with healthy nutrients.  You can add maple syrup instead of honey too.  It just gives it enough sweetness to enjoy this crunchy little treat.  

This freezers well too.  So you can make extra to enjoy later!  Serves about 20
INGREDIENTS
3 cups almond flour
1/4 cup arrowroot
1/2 teaspoon xanthan gum flour  (this helps hold it together) 
1/2 teaspoon baking powder
1/4 cup coconut oil
2 large eggs
1 teaspoon almond extract
1/4 teaspoon salt
zest of a lemon
1/2 cup toasted almond slivers
INGREDIENTS CHOCOLATE DRIZZLE
2 tablespoons coconut oil
3/4 cup dark chocolate chips
zest of 1/2 lemon
1/2 teaspoon vanilla

Instructions

 Preheat oven to 350 F Grease cookie sheet or add parchment paper.
In a medium size bowl add all dry ingredients ,except chocolate drizzle ingredients.  Add all wet ingredients and mix with wooden spoon.
You will want the texture of the batter to be like cookie dough. Divide dough in half.  Form dough into two 12 x 2½ inches wide logs and about 1 inch tall.  I sprinkle a little almond flour on top and rub in my hands to prevent it from sticking.   Bake at 350F for about 20 to 25 minutes.  Let them completely cool before you cut them into biscotti pieces.  After you cut them flip over and bake another 10 minutes.  

Instruction For Chocolate Drizzle

Add all chocolate drizzle ingredients to a double boiler.  I just use a bigger sauce pan 1/2 full of water and a smaller one on top.  I add the ingredients to the small sauce pan on top. I put the pans on stove top at medium heat.  Stir with wooden spoon until smooth.  I just place slightly cooled chocolate sauce in a zip-lock baggie and cut a very very small hole in the corner.  I squeeze the bag and drizzle the chocolate on top.  You can just spread chocolate on top or dip the cookie in chocolate mixture too.  Let cookies cool until chocolate hardens and enjoy!
