Delicious Salmon with Asparagus and Hollandaise

This is so easy to make.  I like to use a vegetable steamer for the asparagus.  I just place it in a pot.  I got one under 10 bucks.  I just steam the asparagus until partially cooked.  You don’t want those well done.

INGREDIENTS:
2 LBS. Fresh Wild Caught Salmon
1 Lemon salmon
Salt & Pepper
Asparagus Steamed (partially cooked)
HOLLANDAISE INGREDIENTS
3 egg yokes
3 tablespoons extra virgin olive oil (Some people like using butter or Ghee)
2 tablespoons hot water
1 tablespoon lemon juice
1/4 teaspoon salt
1/8 teaspoon cayenne pepper

DIRECTIONS SALMON
Place salmon fillets on tray/ baking dish and squeeze juice of a lemon and crack some pepper over salmon.  Place in oven at Broil for about 8 minutes. Watch closely.  Cooks fast.
DIRECTIONS FOR HOLLANDAISE
Whisk the egg yolks in a medium bowl (METAL) WHISK ONE AT A TIME.  Add lemon juice, cayenne, oil, water and salt and continue to whisk until mixed. Place the bowl over a pot of water.  Whisk constantly until it get thicker.  WATCH CAREFULLY.  It will thicken fast.
ASSEMBLE:
Place asparagus on serving platter, than the salmon and finally drizzle on the hollandaise.
Enjoy!
