I absolutely love lemon squares.  These are gluten free and healthy.  Paleo friendly.  They are so tasty, just don’t eat the whole dish.  

Delicious Lemon Squares

Makes 16 bars
Very lemony! Enjoy!

INGREDIENTS
CRUST
1 1/2 cups of  my paleo flour mix link  or other gluten free flour mix
1/2 teaspoon salt
2 tablespoons coconut oil melted
1 tablespoon honey. 
1 teaspoon vanilla extract

LEMON FILLING
zest of 1 large lemon
juice of 3 medium lemons (about 3/4 cup)
1/3 cup coconut oil
5 eggs large
1/3 cup  honey

DIRECTIONS
Preheat oven to 350F.  Grease and 8″ pan with coconut spray or olive oil.
Crust:
Combine all crust ingredients to pan.  You may need to add a tablespoon of water if crust is too dry.  
Press on the bottom of greased pan.  Bake for about 12 to 18 minutes.  It should look a little golden. Take out and add filling on top.
Filling:
While crust is baking make the filling.  Add all filling ingredients to a blender on high until smooth.
Pour the filling on top of hot crust and place back in oven for 15 to 20 minutes.  Don’t over cook.  It will get dry.
Let cool.  Cut into squares and dig in.
