Maria’s Paleo Minestrone Soup – TASTY TUESDAY


Serves 8 to 10

I made one of my old favorite Paleo style.  Tasty and delish!  Enjoy!

Ingredients
2 lbs. hamburger meatminestrone
2 to 3 pork hocks
2 to 3 Italian sausage links
2 tablespoons olive oil
3 leeks cleans and chopped fine
3 celery ribs chopped fine
2 carrots sliced in small circles
4 cloves of garlic crushed
2 large sweet potatoes peeled and chopped into cubes
9 cups chicken stock
(optional 1 cup red wine)

ADD LAST 30 Minutes OF COOKING
2 zucchini sliced in small circles
1 bunch Swiss Chard clean and chopped
3 tablespoons white vinegar
2 tablespoons Italian seasoning
Salt and pepper to taste
Directions:
Sauté with 2 Tablespoon Olive oil and 4 cloves garlic, celery and leeks until soft.  Add to crock pot
Fry hamburger and sausage then add to crock pot
Add stock, pork hocks, wine and sweet potatoes ONLY
Last 30 minutes add zucchini, chard, vinegar and spices.
