Paleo Coconut Pancakes

This are YUMMY!  Finally something that is close to using all purpose white flour.  Normally when I use other non gluten flours it falls apart when I go to spread on my Almond butter.  This holds together well and is nice a light and fluffy.  I added too much milk to this batch so they are thinner.  Just use less milk if you like your pancakes thick.  

Paleo coconut pancakesIngredients
1/2 cup tapioca flour
1/2 cup coconut flour
1 teaspoon of baking powder
1/2 teaspoon of baking soda
pinch of salt
3 large eggs
1/2 – 3/4 cup coconut milk (full fat is the best)  or almond milk
1 teaspoon vanilla extract
1 tablespoon maple syrup

Directions
Whisk wet ingredients first in mixing bowl.  After mixed add in dry ingredients until completely combined.  Add more milk as needed if you want thicker pancakes.  
Spray griddle with coconut spray, Cook and enjoy!  

(optional) can add unsweetened coconut flakes to batter. Sprinkle on top or sprinkle with a few chopped up walnuts or macadamia nuts.
