Makes some delicious truffles that taste like “Reese’s Peanut Butter Cup” WITHOUT the refined sugars and chemicals.  A Healthy Alternative!  Makes approx 12 balls.  Serving size: 1 ball

Ingredients:
1/2 cup Peanut Butter or Sunflower seed butter if doing (Paleo Meal Plan)
1 cup coconut flour
2 tablespoon flaxseed meal
1 tablespoon coconut oil
3 tablespoons honey
1/2 teaspoon of salt
2 teaspoons of vanilla extract
Ingredients for chocolate coating
2 tablespoon of coconut oil
1/2 cup dark chocolate chips

Directions:
Add all ingredients except chocolate coating ingredients in large bowl.  Mix and form into small truffle size balls.   The mixture should form into firm balls.  You may need to add 1 – 2 more tablespoons of flour if too soft.  
Directions for chocolate coating:
In double boiler add chocolate and coconut oil. mix with wood spoon until melted.  Turn off burner when melted.  Dip ball into melted chocolate until completely covered.  I like to use a wooden spoon in one hand and tongs in another.  When completely coated I use tongs to lift out and place on wax paper.  Place in refrigerator or freezer when done.  Enjoy!
