Chicken Rosemary Lettuce Wraps

4 servings

Ingredients
1lb. boneless, skinless chicken breasts cooked and chopped in cube size pieces
¼ Mayonnaise
¼ cup Plain nonfat Greek Yogurt
2 medium celery stocks finely chopped
1 medium granny smith apple cored and cut into little cube size pieces
(I don’t peal it, some may like it better pealed) paleo, clean eating, gluten free
2 tablespoons apple cider vinegar ( I love Braggs brand)
2 tablespoon fresh finely chopped rosemary.
1 teaspoon of honey
1 teaspoon garlic powder
pinch of salt and pepper
Romaine lettuce leaves to hold the chicken mix. 
¼ cup (optional toasted pecans)
Directions
In smaller bowl make dressing:
Mix mayonnaise, yogurt, cider, honey, garlic powder, salt and pepper and mix with wooden spoon. 
Place chicken, apple, nuts, rosemary and celery in large bowl and add dressing. 

Note: It can store in refrigerator about 3 days sealed tightly.  When ready to eat, spoon on the lettuce leaves and enjoy!  Another great version of this would be to replace the rosemary for dill and replace the apple with grapes and replace the pecans with sliced almonds.  YUM!
