Simple Quinoa Salad…

Ingredients

2 cups cooked quinoapaleo, clean eating

1/4 cup toasted nuts

1/4 cup scallions

1/4 cup extra virgin olive oil

3 tablespoons lemon juice/ apple cider vinegar

2 tablespoon chopped basil or parsley

Salt and pepper to taste

Directions

Add olive oil, vinegar, salt and pepper to a small bowl and beat. Set aside. Add rest of ingredients to a large mixing bowl and add dressing. Sprinkle with extra parsley. Enjoy
