PORK APPLE POTATO PIE

This is one of those dishes that I will make over and over.  The apple cider vinegar and apples make this dish AWESOME!!!
Serves 4 to 6

INSTRUCTIONS
2 – 3 lbs pork roast
3 tablespoons arrowroot starch or tapioca starch
3 tablespoons olive oil
1 medium red onion
 4 cloves garlic minced
2 tablespoons finely chopped fresh sage
2 tablespoon fennel seeds
1 1/3 cups apple cider vinagar
2 medium granny smith apples
1 lb of sweet potatoes
1 lb of russet potatoes
3 tablespoons butter
3 tablespoons non dairy milk (almond, cashew etc)
salt and pepper to taste
1/4 cup green onions to sprinkle on top

INSTRUCTIONS
Place starch in bowl and add salt and pepper.  Coat the pork in the seasoned flour.  Add 1 tablespoon of oil in frying pan and brown roast.  Just fry till browned about 2 to 5 minutes.  Place the roast in a slow cooker.  Add in onion, garlic, sage and fennel to frying pan and saute until fragrant about 2 minutes.  Add the vinegar and let it boil for about 2 minutes.  Transfer to slow cooker.  Add apples to cooker and cook on low for 6 hours until pork is tender.  

Heat oven to 375 F

Boil potatoes in large sauce pan.  Cook until tender.  Drain. Add butter, salt, pepper and mix.  Mash well.  Place pork in casserole dish. Top with mash potatoes and cooked until potatoes are browned and crispy on top.  About 15 minutes
