This is perfect as the weather gets warmer.  This tasty healthy,easy to make, cold broccoli salad. This is a great way to enjoy your broccoli!
Make 8 servings
Ingredients:
For Salad:
5 cups of broccoli
1/2 small red onion
1 medium cucumber
1/2 cup Kalamata olives pitted and chopped

For Dressing:
1/4 cup olive oil
1/4 to 1/2 cup fresh basil
Juice of 1 large lemon
2 cloves of fresh garlic

Directions:
for salad –
Chopped cleaned broccoli and add in large mixing bowl
add the rest of the salad ingredients, not the dressing ingredients. Set aside
for dressing –
in blender
add all dressing ingredients and blend thick and creamy. “like pesto”
Then add to mixing bowl with broccoli and chill.
Enjoy!
