  1. 3 pounds skinless chicken thighs
  2. 6 garlic cloves crushed
  3. 1/3 cup ketchup
  4. ¼ cup coconut Aminos (healthy alternative to soy sauce)
  5. 2 tablespoons of raw honey
  6. 2 tablespoons apple cider vinegar
  7. ¼ cup maple syrup
  8. 1 small onion finely chopped
Ingredients for glaze
  1. 2 tablespoons of tapioca flour or arrowroot flour
  2. 1 cup drippings (just liquid not veggies) from cooked chicken in baking dish.
  2. Preheat oven to 375 degrees F
  3. Option: You can let the chicken marinate in this mixture overnight for added flavor or not. Add all ingredients EXCEPT ingredients for glaze. In large mixing bowl, add skinless thighs and coat generously. Then add chicken and mixture to baking dish. Bake for 40 to 60 minutes. Until chicken completely cooked. Place on serving platter and pour on glaze. Directions for glaze. In small bowl start with about 2 tablespoons of flour with about 1/4 cup of drippings. Mix to make creamy paste, so not to get lumps. Place into sauce pan over low to medium heat and beat in rest of liquid. Heat until thickened. Pour over chicken
