Simple refreshing tasty salad. Only take a few minutes to make. Yum!! Use the best olive oil you can. It makes a huge difference in salad dressings with quality.

Ingredients
  1. 4 cups of Arugula or mixed greens
  2. 1/4 cup toasted walnuts
  3. 1 pear sliced thin
Ingredients for vinaigrette
  1. 1/4 cup olive oil
  2. Zest of 1 Meyer lemon
  3. Juice of 1 Meyer lemon
  4. 1 tablespoon of raw honey
  5. 1 teaspoon of Dijon mustard
Instructions
  1. Directions for salad...
  2. Add greens to mixing bowl. Add rest of ingredients. Mix with dressing
Directions for vinaigrette
  1. Place in blender...
  2. All the ingredients listed for the vinaigrette. Blend until creamy and smooth. Add to the Salad and ENJOY!
Notes
  1. If you are not on a Paleo/dairy free diet or a weight loss diet add in some goat cheese crumbles. Serve with a glass of Chardonnay. Yum!
