Love this simple warm comforting dish that is incredibly tasty. The tomato bisque would taste awesome all by itself if you wanted to go meatless. Enjoy!

Serves 4 – 6
INGREDIENTS

Meatballs
1-11/2 pounds ground turkey
1 medium zucchini grated
1 large carrot grated
1 egg
1 small yellow onion
1/4 cup fresh parsley
1 tablespoons curry
2 celery chopped
2 links of Italian Sausage
1 teaspoon garlic powder
salt and pepper to taste
2 tablespoons coconut oil (for baking dish)
Tomato Bisque
2 (28 oz) cans of stewed tomatoes
1- 1/2 cup full fat coconut milk (I use the coconut in can – organic)
3 cups of beef broth or chicken broth
2 tablespoons quality thick balsamic vinegar 
1 medium onion
6 garlic cloves
2 tablespoons curry
1 tablespoon extra virgin olive oil ( for sauteing onion & garlic)

This dish can easily be made ahead and freeze well for those nights you don’t want to cook.  They do seem to taste better the next day.  I will cook day before, let it cool and then refrigerate it.  The next night, all I need to do is heat it up.  Delish!

DIRECTIONS
Meatballs
Preheat oven to 400F
Spread 2 tablespoons of coconut oil on  baking safe cookie sheet with edges or large shallow baking dish.  Mix all ingredients together EXCEPT coconut oil.  Spoon golf size balls on baking sheet.  Place in oven for 20 – 30 minutes until browned and cooked through.  Take out and set aside.
Tomato Bisque Soup
While meatballs are cooking.  saute onions and garlic until soft.  In large pot, add tomatoes, vinegar &  broth. Bring to boil.  Reduce heat and add in coconut milk and spices. Simmer for 6 to 8 minutes.  Place 1/2 bisque in blender at a time and puree’.  Put bisque back in pot.  Then add the meatballs.  Enjoy.
