WHITE BEAN AVOCADO SALAD

This tasty little salad tastes great as a side dish with a BBQ or as a main vegetarian dish over mixed greens and dressing.  This takes less than 10 minutes to prepare.  Fast, delish and healthy!  
Serves 4  (1/2 cup each)

INGREDIENTS
1/2 small red onion
2 cloves of minced garlic
2 tablespoons sun-dried tomatoes  (Costco sells this at a very reasonable price currently)
1 (15- ounce can) Cannelloni beans or white kidney beans.
1/2 (15 – ounce can) artichoke hearts in water. Chopped in bite size pieces
1 tablespoon pesto. (I get a small container at Sprouts or Trader Joes)  
1/2 avocado  cut into bite size pieces ( I squeeze a little lemon juice so it won’t brown)
Balsamic vinegar 

DIRECTIONS
Place all ingredients EXCEPT balsamic vinegar in bowl.  Mix gently and put in serving dish or individual dishes and drizzle a little vinegar on top.  Enjoy!
