Zucchini Frittata
(Low Cal, Paleo, Gluten Free)

serve 2 – 3
Paleo, glutten free, clean eating6 eggs beaten
¼ cup coconut milk
1 chicken Italian sausage cooked and chopped in small pieces
½ onion finely chopped
2  large zucchini sliced in circles
salt and pepper to taste
(optional 1/3 cup Parmesan cheese, minced garlic, 2 stalks celery)

Directions:

Preheat oven 350 degrees F

Fry sausage in small cooked pieces in oven safe skillet then set sausage aside.    

In separate bowl beat eggs and add coconut milk and spices.  Add egg mixture, veggies and cooked sausage to pan.  Arrange sliced zucchini on top.  Bake in oven about 10 – 15 minutes
